Lunch Lady Brownies.

A few weeks ago, I mentioned in my Friday Favorites that these brownies called the Lunch Lady Brownies would be fun to try sometime! Well, I tried them and they were pretty delicious!

INGREDIENTS:

  • 1 cup melted butter
  • 1/2 cup unsweetened cocoa powder
  • 2 cups all-purpose flour
  • 2 cups sugar
  • 4 eggs
  • 4 teaspoons vanilla extract

CHOCOLATE FROSTING INGREDIENTS:

  • 1/4 cup butter
  • 1/4 cup milk
  • 1/4 cup unsweetened cocoa powder
  • 3 cups powdered sugar

BROWNIES DIRECTIONS:
Preheat the oven to 350 degrees, and line a 9×13 baking dish with aluminum foil. Spray the foil with cooking spray.

Melt butter, and mix cocoa powder with electric mixer until smooth.

Add the sugar and flour and mix with mixer.

Add eggs and vanilla and mix again with mixer.

Pour the batter into the baking dish and bake for 25 minutes.

FROSTING DIRECTIONS:
Using a mixer, combine all ingredients and beat until smooth

Frost the brownies after they have cooled and still slightly warm

Place the brownies in the fridge to cool complete before cutting.

These brownies were super easy to make, but very very rich and sweet! The recipe was a breeze to follow. I would make them again!

  1. These look delicious!! My grandmother (really my step-father’s mother) was a lunch lady at the high school my middle son now attends. I know that had to have made her smile from up in heaven when he decided to go there! She made the best potato salad and was always happy to help cook for any large family gatherings we had.

    • They were so so good! My husband had two of them yesterday haha That’s so cute about your middle son and how your grandma worked there! I bet she is loving that from heaven!
